Beef and broccoli
Tender strips of flank steak and bright broccoli florets stir-fried with garlic and ginger in a glossy oyster sauce.
Method
- 1
Toss the beef with the bicarbonate of soda, 1 tbsp soy sauce, Shaoxing wine and 2 tsp cornflour, then mix in 1 tbsp of the oil.
- 2
Leave to marinate at room temperature.
- 3
Whisk the oyster sauce, 1 tbsp soy sauce, dark soy sauce, sugar, sesame oil, stock and 1 tbsp cornflour in a small bowl.
- 4
Blanch the broccoli in a pan of boiling salted water until bright green and just tender, then drain well.
- 5
Heat 1 tbsp oil in the wok over high heat until it smokes.
- 6
Spread the beef out in a single layer and sear without moving until browned underneath, then toss briefly and tip onto a plate. Work in 2 batches if needed.
- 7
Add the remaining oil, the garlic and ginger to the wok and stir-fry until fragrant.
- 8
Stir the sauce again, pour it in and let it bubble until thick and glossy.
- 9
Return the beef and broccoli and toss until coated and hot through.
- 10
Serve straight away with steamed rice.
Notes
- The small amount of bicarbonate of soda keeps the beef tender. Do not add more, or it tastes soapy.
- Slice the beef while it is partly frozen for neat, thin strips.
